Tomato Soup
Degenerative eye problems are prevented through choosing high Vitamin C fruits like tomatoes. Tomatoes contain lycopene and lutein, carotenoids that are crucial for good vision specially for children. Tomato also protects the eyes from sun damage.

Ingredients
- 2 tbsp Olive oil
- 1 large Onion peeled and finely chopped
- 2 Carrots peeled and chopped
- 2 cloves Garlic finely chopped
- 800 gm Vine tomatoes chopped
- 400 gm Canned (puree or juice) Tomatoes
- 3 cups Stock Vegetable or Chicken Or 750 ml
- 10 – 15 Fresh Basil leaves or to taste
Instructions
- Heat oil in a large pan, over a medium flame. Add the onion and carrot, reduce the flame to low and cook until softened but not colored (around 10 mins)
- Add the garlic and cook for a further minute.
- Add the tomatoes, stock and stir. Bring to the boil, reduce the heat, and simmer for 25 mins. Alter the flame as necessary during cooking to maintain a gentle simmer, stirring occasionally.
- Remove the pan from the heat and add the basil leaves.
- Using a blender, blitz the soup until smooth. Taste test.
Notes
Tip: You may add cream on the top to decorate the soup.
