Tomato Soup

Degenerative eye problems are prevented through choosing high Vitamin C fruits like tomatoes. Tomatoes contain lycopene and lutein, carotenoids that are crucial for good vision specially for children. Tomato also protects the eyes from sun damage.

Ingredients
  

  • 2 tbsp Olive oil
  • 1 large Onion peeled and finely chopped
  • 2 Carrots peeled and chopped
  • 2 cloves Garlic finely chopped
  • 800 gm Vine tomatoes chopped
  • 400 gm Canned (puree or juice) Tomatoes
  • 3 cups Stock Vegetable or Chicken Or 750 ml
  • 10 – 15 Fresh Basil leaves or to taste

Instructions
 

  • Heat oil in a large pan, over a medium flame. Add the onion and carrot, reduce the flame to low and cook until softened but not colored (around 10 mins)
  • Add the garlic and cook for a further minute.
  • Add the tomatoes, stock and stir. Bring to the boil, reduce the heat, and simmer for 25 mins. Alter the flame as necessary during cooking to maintain a gentle simmer, stirring occasionally.
  • Remove the pan from the heat and add the basil leaves.
  • Using a blender, blitz the soup until smooth. Taste test.

Notes

Tip: You may add cream on the top to decorate the soup.
