Degenerative eye problems are prevented through choosing high Vitamin C fruits like tomatoes. Tomatoes contain lycopene and lutein, carotenoids that are crucial for good vision specially for children. Tomato also protects the eyes from sun damage.
Heat oil in a large pan, over a medium flame. Add the onion and carrot, reduce the flame to low and cook until softened but not colored (around 10 mins)
Add the garlic and cook for a further minute.
Add the tomatoes, stock and stir. Bring to the boil, reduce the heat, and simmer for 25 mins. Alter the flame as necessary during cooking to maintain a gentle simmer, stirring occasionally.
Remove the pan from the heat and add the basil leaves.
Using a blender, blitz the soup until smooth. Taste test.

Tip: You may add cream on the top to decorate the soup.
