Rajma Curry (Kidney Beans)

Rich in various vitamins and minerals, rajma has many health benefits and is also good for children. It also contains folate which helps in brain development in growing Kids/Teens.

Ingredients
  

  • 1 cup Rajma
  • 2 medium Onion (finely chopped)
  • 2 medium Tomato (finely chopped)
  • 1 tsp Ginger garlic paste
  • 1 tbsp Ghee
  • ½ tsp Turmeric powder
  • ½ tsp Coriander powder
  • ½ tsp Garam masala powder
  • 1 tbsp Green coriander leaves (finely chopped)
  • cups Water
  • To taste salt

Instructions
 

  • Wash rajma under running water and soak it overnight in clean water. Alternatively, you can soak rajma in boiling water for a couple of hours in the morning.
  • Put rajma with water in a pressure cooker. Add turmeric and salt, cook on a medium flame for 20 to 25 minutes or until rajma becomes tender.
  • In a wok or kadhai, heat ghee.
  • Add onions and cook until they turn translucent.
  • Add ginger and garlic paste. Cook for a minute or two.
  • Add tomatoes and cook covered until the mixture is cooked nicely or the ghee separates from the masala.
  • Add coriander powder and mix well.
  • Add boiled rajma and cook covered for a few minutes until the gravy thickens.
  • Add garam masala and cook for a few more minutes.
  • Garnish with freshly chopped coriander leaves and lemon.

Notes

Serving Tip: Serve rajma curry with roti, paratha or boiled rice.
